How to prepare a delicious pumpkin risotto:

  1. Roast pumpkin
    Preheat oven to 200°C. Peel and dice the pumpkin and place on a baking tray lined with baking paper. Season to taste with salt and pepper and add olive oil. Roast the pumpkin cubes for about 20 minutes or until soft and lightly golden.
  2. Prepare the risotto base
    Heat 1 tbsp olive oil and 1 tbsp butter in a large pan. Add the finely chopped onion and garlic and fry over a low heat until the onion becomes translucent. Add the risotto rice and stir until the rice becomes slightly transparent. Then add the white wine and allow the alcohol to evaporate.
  3. Add the vegetable stock
    Add the hot vegetable stock by the spoonful and stir constantly until the rice is al dente and the risotto is creamy. This will take about 15-20 minutes.
  4. Mix the risotto together
    Add the previously roasted pumpkin cubes, pumpkin cream and grated Parmesan cheese to the pan. Mix all the ingredients together and season with salt and pepper. Stir until the risotto is perfectly creamy.
