The anchovies caught in the Adriatic Sea come from nutrient-rich waters that provide ideal growing conditions. This gives the fish a particularly pure flavor and high quality.
All anchovies are processed entirely by hand immediately after being caught. After being cleaned, they are left to age in barrels until they reach the ideal level of maturity, which gives them their characteristic deep flavor and delicate texture.
Our anchovies are caught sustainably using the purse seine method in combination with lampara lights. This fishing method helps protect the marine ecosystem and ensures that the fish remain intact and of high quality when caught.
The result is carefully selected and prepared anchovy fillets preserved in 100% Italian oil—the perfect choice for gourmet dishes, salads, pasta dishes, or as an appetizer.
