Crudo is considered an Italian delicacy and has been a well-known and highly regarded dry-cured meat since the time of the Roman soldiers, around 400–300 BCE. It is made from pork shank. Uses: as a topping for pizza, in pasta dishes, or as part of a meat platter served with melon, grissini, or balsamic vinegar.
